SMOKY CURRIED EGGPLANT - AKA BAIGAN BHARTHA, A NORTH INDIAN SPECIALITY OF ROASTED BRINJALS, SKINNED AND MADE INTO A SIMPLE BUT EXOTIC PREPARATION. THE WORD 'BHARTHA' (PRONOUNCED BHURR-TAAH) IS EGGPLANT PUREE WITH SPICES, TOMATO, GARLIC, AND GREEN PEAS.

NAAN BREAD - IF THERE'S ANYTHING THAT WILL MAKE YOU FALL IN LOVE WITH INDIAN FOOD, IT'S NAAN, A TRADITIONAL LEAVENED OVEN-BAKED FLATBREAD.
